I can rock an appetizer like nobody’s business. A dip? I’m on it. But for some reason, cooking– like a full meal, has never been my forte. I try. And try. And follow the recipe to a tee. And although it’s never an epic fail, it’s never a home run either. Last week I messed up spaghetti…seriously! I’m embarrassed to admit it. But this time you guys, I think I actually made some progress!
As wedding season is going to be a little crazy this year, Brian and I decided to designate one night a week for a date night. We made the decision to try and make something we’d never made before (which is a lot of things, since we frequent the frozen foods section on a weekly basis.) Up this week: meatloaf and brussel sprouts with bacon (..ok turkey bacon.) I know…I’m sure some of you are rolling your eyes as you’re whipping up a five course meal for 20 guests. But hey, progress people! And if I do say so myself, it was pretty yummy. Wasn’t as good as my mother’s (it never will be) but it totally hit the comfort food spot and was super simple to make.
